Easy Over Easy (Cheater's Poached Eggs)

Hi, guys! Hope you are all well.  My husband and I like to put aside time on Sundays to have a nice leisurely breakfast. My work schedule has me gone at an ungodly hour weekdays.  I thought I would share a fun tip I learned a while back from the Food Network.  My husband loves his eggs over easy.  I would make them and the yolks would break from time to time.  It was annoying, to say the least.   Now when I am making a pan of eggs, I put them in the pan and when they first set, I pour a bit of boiling water in the pan and put a lid on it.  They cook perfectly and you just have to take them out - and no breakage.  I like to call them cheater's poached eggs. The yolks are runny and the whites are set perfectly.

This is the way my dad taught me to make eggs and it works a lot easier for runny eggs than trying to flip them in the over easy method. Great tips!

I figured out how to do this too! By accident, actually, but it works all the same with poured water too. So tasty!

Winnie - great tip! I am out of eggs and it is early on a sunday morning and this looks so yummy! Perhaps pancakes will have to do today...or fruit salad and toast? My son and I love to eat breakfast together in our sunny kitchen nook - well we pretend it is sunny - this is Seattle after all...

That is a neat little trick! I love my eggs over-easy as well. Especially with hashbrowns which I mixed up. Your bisquits looked really yummy too!

Great tip! I think my husband would like these! If he breaks a yolk he will just throw it out (can you believe that!) So I eat a lot of broken yolks : )
