Hi, guys! Just a short post that I thought you might enjoy. Today I made mashed potato pancakes from leftover mashed potatoes. I will let you in on a secret, I make a ton of extra potatoes so I will have leftovers just for this purpose!
I make large fat pancakes out of the mashed potatoes. I then dust them lightly on both sides with flour. Sprinkle with salt, pepper and smoked paprika (if you can get Penzey's brand spices, I would highly recommend them as they are my favorite. I am NOT paid by them to say that, just want to recommend them to you). I fry them up in a combo of olive oil and butter. Let me tell you, they are delicious and my husband requests them as soon as he learns I have mashed potatoes on the menu the night before. My sisters and I all remember these from my mother's kitchen and us Poley gals never met a potato we didn't like.

What a great idea! Whenever my husband makes mashed potatoes there's almost always some left over.
Oh you are sooooo bad. I've been on a low carb diet, but seeing these patties are like a slice of heaven. I can almost smell them from here.
Seeing these brings back some wonderful memories of my dad who loved these and first introduced me to their deliciousness as a young girl.

O M Gee! My mouth is watering. That is one of the things that are definitely NOT on my diet sheet the doctor gave me but looks Oh So GOOD!!!

My mother used to make these all the time as do I but we add an egg and a little flour to the potatoes...may have to try yours...YUMMY!
My mom used to make "potato cakes" -- makes me miss them looking at yours!
Yum! My mother used to make these sometimes with chopped up bits of meal too.
Oh my goodness I haven't had these since high school. My boyfriends parents used to make them all the time for me because I loved them so much. I can't believe I've never tried to make them myself. I'll have to try it out :)
